Customizing "All Programs" Screen

When clicking on "All Programs", all of the programs do
not show due to lack of space.
How can I create a folder like "Utilities" and put some
of the prorams in it.
Or, is there a better way to make all of the programs
show.

Right-click the Start button and choose "Open" or "Explore". You can
reorganize the Start Menu from here.
