Converting a Roaming Profile

I have been looking for a way to convert a domain roaming profile to a local
profile without access to the DC. The system is a P4 running Windows 2000.

My Situation:

I have a machine that a friend has been working on that use to be part of a
domain. The server has since been wiped and rebuilt, but not setup as a
domain. My friend does not want to rebuild the workstation if we can help
it. When he try's to login it prompts him with a message that the system
can not find the domain server and will use the cached local roaming
profile.

I have logged on locally as admin and cannot find the user account that he
uses to login to because it must be cached somewhere else or ? I have
created a new local account and was in the process of transfering any and
all files from the cached roaming profile to the newly created user profile,
which worked fine. Once I logged in as the new local user everything seemed
to look ok until I tried to open a Word or Excel doc, then I remembered that
Office 2000 wants to access the CD everytime you create a new user and open
office docs. That all seems fine but my friend does not have the same
Office cd that the applications was installed with and cannot update or
whatever.

My questions are:
1: Can I convert the roaming profile to a local profile, and rename the
user locally?
2: How the heck can you just strip Office 2000 off of the system
completely without the original install disc?
3: Any suggestions?
