once a document is scanned, how can I use it as a word document and edit it?

Use an optical character recognition (OCR) program. Most scanner
hardware is sold with a bundle of software that includes some form of
OCR. Depending on the version of Office you have, you might have
Microsoft Office Document Imaging -- read

quick intro. Or you can buy a commercial OCR program
(http://www.abbyy.com/finereader_ocr and
http://www.nuance.com/omnipage are the major players).
