Changing Outlook (2003) modify reply settings

I'd like modify Outlook so that when I reply (not forward, ideally) the
original text is made gray and my new text is say, black. Currently the old
text remains the same and my text becomes blue.

I thought there were some settings that made such things easy, but all I can
find are settings that change the amount of indent and the left bar. Is
this stored in a template somewhere?

If anyone has any pointers, I'd be grateful.
