Changing default email address

I have a client machine running Outlook 2003, fully patched, in an Exchange
environment. We are using Exchange for mail box storage, public folders,
calendaring, etc only - email is sent through an external mail server. We
have just added the Exchange server and as part of the roll-out we imported
users local .pst files into their Exchange mailbox. Their Contacts folder
was enabled as an Outlook Address Book and set as the default address book.

This particular client machine has a listing for a contact who also has a
mailbox on the Exchange Server. In this client's Contact page, it shows the
contact's email address as the SMTP address - which we want (these are
laptops, both users travel) but in the address book it displays the X500
email address for the contact i.e. o=xxx,ou=xxx, cn=yyy, cn=yyy, etc.
Consequently when the user is away from our Exchange environment she can't
send emails to this person. (as it turns out this person is her husband...he
doesn't seem to be complaining). I have tried deleting the contact, etc but
am unable to make this X500 address stop appearing as the default address.

I really need some help with this one - any suggestions are appreciated.
