How can I change the folder used by Explore in Start
Menu, when i click on start , explore.

You cannot do this.This entry is for to quickly access the Start Menu
in an Explorer window. To start the Explorer for other purposes, use
the shortcut in the Start Menu, the key combination WIN + E or create
you own shortcuts with the help of this text: "Explorer.exe
