Can you change the default setting for a new task to "No Date"?

When using the "type a new task" field, is there a way to change the default
setting so the task is labelled as having no date instead of today's date?

No, but you can type your Subject, and then press the TAB button twice on
your keyboard and write "none". Then press ENTER.

You're referring to the To-Do List in Outlook 2007, right? If so, right-click
in the flag column -- it doesn't matter on which item -- and choose Set Quick
Click. Change the choice from Today to No Date, then click OK. This changes
not just the quick click for the flag column, but also the default for new
To-Do List items.

That's cool! :)
I'll be using that for tomorrow's tip if I may. Giving you full credit of
course ;-)

I figured you'd pounce on that one. ;)
