How do I customize the defaults on new tasks?

My outlook task section defaults to today for "Date Started" and Date Due"
sections. How do I change this default?

What version do you have? All versions I can recall say "Start Date" "Due
Date".

Can you explain why you want to change the default? ( I don't think it's
possible - but if you explain what you are trying to achieve, I may be able
to suggest a close match).

Outlook2007

When I add a new task the program default settings for the sections titles
Start Date and Due Date are set to today. I trying to find a way to change
those so they default to "none".

After much testing I found that you are making a new Task in the Daily Task
List. Next post, please be specific about what you are doing. The Daily
Task List does default to today.

2 ways to make a new Task with a blank Start and Due date:

Make the new Task in the Tasks folder.
Use New, Task from the menu.
