Can two people remotely access the same PC simultaneously?

We have a PC at our office, with XP Professional, and two of us access it
using our laptops and a wireless network. We'd both like to be able to
access it from home and are considering setting up remote access, but what
happens if we both want access at the same time? We would be trying to
access Word, Excel and QuickBooks files. Thanks in advance.

No... By design Remote Desktop on an XP Pro machine will only allow one user
at a time. See this article for an explanation.

If you just want access to shared files look at using a Virtual Private
Network (VPN). Note that some applications written for a desktop will have
data corruption problems if multiple users are accessing the same file at
the same time. Also note that most desktop based applications are not
designed for real time collaboration over a network. You really need a
server based OS to do that.

You could also use a VPN end-point type router. Most major manufactures make
these, ie. Linksys, Netgear, ZyXEL, etc, that would handle a few concurrent
connections. For industrial strength routers Cisco comes to mind...
