Can I use a single SATA Drive on an Asus KV8?

I recently purchased a samsung 120 gig sata drive to use for extra
storage. Currently I have an instalation of windows xp sp1a on an IDE
drive with the KV8, I have installed drivers for both the VIA and
Promise sata controllers on the mb, but when I connect the sata drive
windows does not see it.

I've tried both controllers, and the drive will show up on the
bios...and there is some VIA raid utility that I can run from windows
which shows the drive, but the sata drive doesn't show up in windows
itself.

Do I have to have a raid array for the sata drives to show up in
windows, or am I just doing something wrong?

Yes, you can connect a single SATA drive on that board.
How exactly are you checking if Windows sees it? You need to
go into Disk Management (Control Panel/Administrative Tools/Computer
Managment/Storage) to parition the drive and select a drive letter.

I recently installed a Seagate 200 GB SATA onto my A7N8X Dx. Couldn't
get the board to see the drive. Then I noticed that a jumper on the
mobo was set to disable SATA. Could that be your problem?
