Can a copy email be sent to another email account?

I have recently got XP and Outlook 2003 I have set up 5 email addresses on
five different profiles.

I would like to know if its possible to have a copy of every incoming email
forwarded to one of the accounts?

We are a small business and if people are away on holiday we still need to
keep track of their emails.
 
Do you use Exchange for your mail? Those rules should be setup on the mail
server not on your PC.
