Calender Color Coding Question

I make a new appointment, color code it in the label drop down box and then
invite attendees. Attendee accepts but the appointment does not show up color
coded on his computer. And vice versa when he sends me invites.

Is there a way to make sure the appointment stays color coding even after
being accepted into another users calender?

No. There's no guarantee that his red doesn't mean the opposite of yours. Therefore, calendar color labels are not transmitted in meeting requests.
