bullet animation

This is driving me crazy. I've read all the posts I can find about animating
bulets line-by-line but I'm evidently not figuring out where all the buttons
are.
The two previous answers I've see are:
When you set the Custom Animation for the bulleted textbox, click the
dropdown arrow for that animation in the TaskPane, click "Timing", click the
"Text Animation" TAB and set it there to animate by the level desired.
You can still set the animations to happen "On Click" - After you set the
animation to happen by level, your animation for the paragraph will have a
line following it. Click that line and the animation sequence will expand.
You can then change the timing on any or all of the level animations

I can find the "on click" I just can't find anything that will let me
animate each level of a bullet separately. I'm not seeing anyting like a
'Timing' selection in the Custom Animation section although I do see a
"Rehearse Timings" but that doesn't seem to work as advertised.

It used to be so easy to have each level of bullet show up on a 'per click'
basis--now it seems to be next to impossible to find! Any easy suggestions?
