Greetings,
I need to backup IIS information ... I know I can backup the directories
that have the stuff.. but I also want to backup the IIS config for each
website. Where do I find this information and what files do I need to
backup to make sure I'm getting all of this?

Backing up the IIS Metabase (I believe what you want)

Right-click My Computer on desktop | Manage | Services and Applications | Select Internet Information Services | Right-cleck Backup Restore Configuration | Create Backup... I think you can finish it.

Excelent... now.. how can I automate that? and/or make IIS put it's
config in a file instead of a metabase? Any suggestions?
