Backing up Outlook data

I need to backup all of our outlook data. we have two users on this
computer. When I look at the outlook data folders for each user, the are of
different sizes. One user is a limited access user, but is the user who uses
outlook most often. The second user is admin and uses outlook rarely. The
outlook data in the admin folder iare larger files than that of the limited
user. Why are the files different sizes, and which set do I back up?
