Probably best to back up all your Outlook Data. The file you need to back up
is your Personal Folders file (*.pst) It's where all the mail, calendar,
contacts etc are stored.
So wouldn't the contacts actually be in the *.pab file, or
is the Outlook Personal Address Book something different?

The PAB is completely different and hasn't been used by Outlook for several
years now. It was replaced by the Outlook Address Book, which isn't a file
at all. It's just a dynamic view of the Contacts Folder.
