Automatic Recovery of Deleted Folders

I am currently running Outlook 2002 on WinXP, connecting to an Exchange 2000
server.
One of my clients deletes folders from his exchange mailbox, and empties his
deleted items folder, just to have the folders reappear the next morning.
Any ideas?

Is he working with an OST file?
Anything interesting running on the Exchange server, and is there anything
in the application event logs?
I'd post this to microsoft.public.exchange.admin as it isn't really an
Outlook issue...
