Any way to stop default deletion of calendar items? (archived or otherwise)

I am a psychotherapist and use my Outlook calendar to keep my schedule.
Is there any way to keep the calendar from permanently deleting old
items? I'd like to be able to keep my calendars with the listing of
client's appointments daily without them being deleted regardless of
how long I use this system.
