2003 SBS vs 2003 Standard Server

Not sure if this is the correct place, but I will ask
anyway.

I am looking to place a file server in my company that
will serve both mac OS9, Windows 9x and XP clients. I
have recently received a quote of $700+ for an OEM
verision of Standard Server 2003, and a quote of about
$500 for SBS server, both with my hardware purchase.
Though SBS has many other things I will probably never
use, it is less expensive than the stand alone version of
2003 Server that I need is included.

If I go with SBS, will I be able to install only the
Server OS alone? Or does this install as one big package
that cannot be broken down?
