My outlook emails are showing sent dates in the future (October 7), today is
October 4. I have checked the system date and it is correct. How do I fix
the Outlook email to agree with the system date?

What does Tools>Options>Calendar Options>Time Zone say?

It shows that the field for timezone is marked: I am in Central time and it
looks like it is correct. What should I look for?

I'd be inclined to say that your server is adding the erroneous time stamp.
