I use Outlook 2003 for my emails and Firefox as my browser.
In Outlook if I click a link it always opens in Internet Explorer. I want to have links open in Firefox. I have found links showing how to do this in XP, but not in Windows 7. Any help would be appreciated :D

Yup, Firefox is my default browser, the link you provided is for XP, not Windows 7 :(

Epic fail on my part. I suppose I need more reading classes.

Ok...I'll improve on Steve's response.

Start>Default Programs. Set Firefox as the default browser.

This is a Windows change rather than a Firefox change. If you do not see the default programs link, you can place it there from the start menu properties dialog box. You can access this via control panel or right click the taskbar blank space. From there, start menu tab, Customize, tick the Default Programs box. OK, Apply, OK and you should now have the link. Start again from the top and check it out.
