Microsoft Outlook 2007 Contacts vs Address Book

Hello All,
I have recently upgraded from Eudora to Outlook 2007. I have everyone
organized in my contacts by catigories and also by department name. When I
want to send out a e-mail, I need these addresses in the address book
organized just how I have them in my contacts either catigory or department
name along with first and last name. The only way they are listed in the
address book right now is by first and last name. Is there anyway to
reorganize or to send out a e-mail to several people through contacts?

I know in Eudora I was able to select several people from my address book
and then insert them into my e-mail.

The address book view in Outlook is an outdated relic that has not been
updated in a decade. It provides none of the features you seek. Microsoft
never intended for you to use it. They expect you to use customized views of
your Contacts Folders instead. You cannot group the address book view in any
way other than by separate Contact Folders. Your only options for sorting
the address book view are:
1. First, Last
2. File As...

If I were to use the customized views of my contacts, how so I incert
multiple names into the To or CC field of a e-mail? I tried highlighting them
but when I right click I don't see a choice to somehow get them into the
e-mail.

That would depend entirely on how you created your Contacts and whether you
wanted to send to all or only one of the electronic addresses for each
Contact.
Normally one selects the intended recipients in the Folder > Actions >
Create > New Message to Contact...

Is there a way then to insert them into the CC field instead of To or will I
have to copy and paste?

In your Contacts folder, select the contacts to whom you wish to send a
message, then click Actions>New Message to Contact. You can do this with
categories as well.
