How do I change the 'to' address friendly name

When users select an address from the contact list the 'to' address shows up
as Jane Doe (email). I need the name to show up as Jane Doe
([email protected]). Does anyone know where to make this change?

I think this is to do with the way they set up contacts - the only way I can
see to change it is to go into each contact and change the 'Display as' field.
