I use a ZIP 100P and use it with XP home. when I formatt
a disk I have a choice of NTFS, FAT or FAT32. What is
the preffered formatt and are the other two way
interchangeable?

One of the uses of a zip disk is to be able to transfer files to another
computer. Only you know what file system the "other" computer will
recognize. If it is a Win98 computer, you will need fat32. If it is a
DOS/Win95 computer you will need fat. If it is only to Win 3.51, Win NT, Win
2000, Win XP or Win 2003 computers, then you can use NTFS.

FAT. This way it can be read by any Win32 OS.

It's only 100MB, if it was ZIP 250 *maybe* FAT32 would be warranted.

They are not interchangeable. However, XP can read and write to FAT,
FAT32, and NTFS. Keep in mind neither DOS nor Win9X is able to read
or write to NTFS. Also, when formatting ZIP disks, it's best to use
the Iomega software.
