XPE Display Orientation

Does XPE allow you to change the disply orientation. For
example, rotate the display 90 degrees (go from landscape
to a portrait mode). Has anyone seen or heard of someone
doing this?

Screen rotation is only video driver feature. There is no currently an XPe
component that includes screen rotation (at least in XPe/SP1). Although,
some custom XPe devices, like Tablet PC or UniWill tablet, support the
feature.
You will likely have to convert the display driver and add to your build.
There are also some other third party solutions that you may consider
componentizing in to your image. E.g. Pivot Pro:
