word will not spell check my docuement, as you can see I can't spl

How do you mark & umark text "do not check spelling and grammar"? I have
tried but I cannot find a way.
 
Select the text and go to Tools | Language | Set Language. Check or clear
the appropriate box. If you have specific types of text that you routinely
want to protect from proofing, the easiest way is with a character style
defined as Default Paragraph Font + Do not check spelling or grammar.
