Word 2007 templates

I have just updated to Word 2007 - I can't figure out how to create a
template of my own from a Word document. Cant find the text entry fields or
anything ....

Are you referring to form fields? To find those you'll have to display the
Developer tab (Office Button | Word Options | Popular: Show the Developer
tab in the Ribbon). You will then find them in the Controls group under
Legacy Tools.
