Word 2003 how do I make the fields erase or not show data?

I am making forms in Word 03 and inserted several pull down boxes, how do I
make the boxes reset to not display any information until it is changed by a
user?

You should create your form as a template -- use File > Save As, open
the "Save as type" dropdown, and select "Document Template (*.dot)"
before clicking OK.

Then use the File > New command to create each new copy of the form,
and the fields will automatically be blank (or show whatever text you
put in the Default box of the field's Properties dialog).
