In Word 2000, when I go to "insert" "date and time" , I cannot find the date
"November 7, 2005". It did appear until very recently. Does anyone else
have this problem? How did you correct it?

Thank you,

This format should be available and certainly will be available if it is
selected as your Long Date format in Windows | Control Panel | Regional
Options.

On the other hand, most documents that you need to insert a date in should
be made from templates that already have a CreateDate field formatted the
way you want, where you want it.
