There is a log of conversations if that I what you are after. It should be
enabled by default. The conversation logs are usually stored in your
Documents folder under 'my received files'

I don't see a "my received files". Is there somewhere else it may be or if I
make a new "my received files" would it automatically go there?

Maybe the feature isn't enabled. Open messenger and the click either the
Tools option if you are displaying the main menu toolbar or, if the main
toolbar isn't displayed, click the down arrow (if you hover your mouse over
it, it will show 'show menu') on the icon to the right of the paintbrush.
Once you have the menu visible, click Tools followed by Options. In the
Options window click the Messages option in the left hand pane. In the
messages window look near the bottom for a section marked 'Message History'
You should now see an option marked 'Automatically keep history of my
conversations' There should be a 'tick' in the box next to this option. If
there isn't then click on the box with your mouse until a tick appears, then
click the OK button. You will also see the exact path where your
conversations are saved this should be C:\Users\<yourname>\Documents\My
Received Files.

Thank you John! One other question.....is it possible to delete the sign on
email?

When you 'sign in' to messenger you see our email address and then
underneath you type your password (unless it is set to log on
automatically).

If you are signing in manually you should see the following options:

Remember Me
Remember my password
Sign me in automatically

If you are just seeing your email address then the 'remember me' option is
enabled. To disable it either remove the 'tick' mark from the box next to
the 'remember me' option or click the (forget me) link. The email address
should then not appear again and you will have to manually input the email
address every time you log in.

The only option I have is "sign me in automatically". How do I delete an
account permanantly from Windows messenger?

I have checked the links and other articles and still can not find how to
delete the email addresses that come up when I attempt to sign in. There is
only one option available to me "sing in automatically" and now when I click
