Windows 2000 server utilization reporting

I need to perform a utilization audit of a Windows 2000 server in
order to determine sizing / candidacy for a server consolidation. The
statistics would be disk subsystem read/write, NIC, CPU, memory (and
anything else I might have forgotten). I would like to see a report
showing data collected over a number of days showing daily usage
trends (peaks and troughs).

What would be the best tool to perform this? If it is Perfmon, are
there any articles / whitepapers or suggestions out there for doing
this. Also, if Perfmon, how much disk space should I allocate?

Any help would be appreciated!
