Why is my signature Times Roman when I make it Arial in Options?

I created my email signature in Arial, but it keeps showing up in my emails
as Times Roman..excpept for the hyperlink email address..which is Arial. When
I check it in Edit Email Option, it shows up as Arial..just not on my emails.
Why?

Are you using a different font in a stationery setting versus your
signature?

Under Tools-->Options-->Mail Format
There is an email font setting in Stationery and Fonts and a font choice in
Signatures.

I don't know whether one overrides the other or they cooperate. They
cooperate in Office 12.
