The subject lines have disappeared from my deleted items file in the past
day. How can I restore those and make sure they always appear?

Right click on the Column header, select Field Chooser, find the Subject field and drag it to where you want it in your columns.

After furious head scratching, Mollymoo asked:

Subject field was already designated and in the proper place. No changes have
been made to my computer for over a month. The subject information just
suddenly started disappearing two days ago.

What column are you sorting on? Sometimes, if you inadvertently select the Icon view, your views will make no sense.
