Word and Excel don't have anything to do with Vista's complexity.
I don't have Office 2007, so I don't know if the undo has changed...
In Word 2003, the Undo is found under Edit, on the toolbar, or you can hit
Ctrl-Z
And in Excel, oddly, they are found in the same place.

Three points here:

1. Nothing in Word or Excel has anything to do with Vista or with
"VISTA's simplication." These are just applications that can run under
Windows Vista *or* under some other operating system.

2. Word and Excel questions are best asked in a Microsoft Office
newsgroup (that's where the Office experts hang out), not here in a
Windows one.

3. The standard Windows keyboard shortcut for Undo is Ctrl-Z.

Upper left corner near the orb. There is a disk icon (Save) and a
counter-clockwise arrow for Undo.
