where is file sharing?

I thought I had file sharing turned on. That is, I thought I could
access file-sharing by right-clicking on a folder and selecting an
options similar to Sharing and Security. I have no such option.
Wetn to My Computer | Tools | Folder Options | View. Thought there was a
sharing option button there. Nope. How do I confirm file/folder
sharing is activated on my PC?

check control panel>network connections >check properties of your connection
(likely "local area" for your NIC) to see if file and print sharing is
installed

Are you using XP Home edition?
If so, simple file sharing is enabled by default and cannot be turned off. You will need to boot to Safe Mode to access the Security tab.

some shared folders I want to unshare (is that a word?). How do I do that?

Right-click the folder in question
In the drop-down menu, select "Sharing and Security..."
Click the radio button "Do not share this folder"

If you want to leave sharing turned on, you need to use the permissions that are defined in the article that I mentioned. This allows you to specify which folders will be shared.
