When you create a new field what is the default data type

I'm guessing that if you go into Tools, Options, and the Tables/Queries tab
that you'll find the answer there.

It is usually Text, but that can be changed in the Application options.
Click on Tools>options>Tables/Queries tab. Note: this will affect all new
fields created in all databases. But since it is just a default the data
type is easily changed in the table's desigh view.

How would you get help in a course about something for which there was/is no
newsgroup? I suppose the real question might be "Is there anything for which
there is not a newsgroup?"

It's always a good idea to say what version you are using. It is always an
even better idea to ask your question in the large white space where you
told us what you are -- many newsreaders truncate the subject line, so it
might come out as "When you create a new field what" to some person who
could answer your question -- if they only knew what it is.

There's a tradition here that "we don't do your homework" but that "we will
help you over stumbling blocks", so here's how you can find an authoritative
answer to your question.

In Access 2003, in the Database Window, click on Tools | Options and then
click on the Tables/Queries tab. Then, please, post back here what you
discover.
