When I delete a word or a letter...

when I delete a word or anything really and try to type again, the new words
run over my old text and I have to rewrite everything all over. How do I
change this so I can only delete what I want?

Your INSERT key (overtype) was accidentally depressed. Either press the
INSERT key to turn it off or double-click the black OVR at the bottom of
your Word screen.

Press the Insert key or double-click OVR on the status bar to toggle from
Overtype back to Insert mode.
