I am setting up a network for a new customer. All systems use XP Pro -
there's only about a dozen or so machines total. The new office though,
will have security cameras and they want to be able to watch these cameras
via the Internet remotely, when the store is closed. or when the bosses are
home.

How do I do this?

I'm not worried about their LAN that's easy. But the cameras?

Many network camera's are stand alone ip servers some feed through to analog
cams ,, how many ports you'll need to open in the router for each is
dependant on camera maker. Usually you can't use a range of ports each cam
needs its own virtual server ports assignments, or port forwarding - some
use one port, most use more than one, 2 -3 usually.

If they already have a cctv system you'll probably need to investigate
what's existing as far as cctv servers or etherNet adapters to get it
online.
