Under: "Set Program Access & Defaults" from the Start Menu, what does it mean
to: "Choose a Default Virtual Machine for Java?" What should I choose & also
should it be enable or disable?

It means to choose which Java runtime environment/
virtual machine/Java plug-in/Java interpreter to use -
Microsoft's version or the official Java from Sun Microcomputer.
Since Microsoft lost the court case with Sun, the
Microsoft version is being phased out.

Go with Sun:

Or, go with the version being phased out:

As for Java in your browser, some believe it to be a security
risk like ActiveX Controls and they disable it. On the other
hand, if you only go to trustworthy websites, leave it on.
