using contacts for schools

I am using outlook to keep track of student information in a Sunday school
program. I have entered each family as a contact and made a custom form,
which shows the parents names as the primary contact names and the children's
names are also part of the forms. What I want to know is: At a quick glance I
can see how many FAMILIES there are, by way of seeing how many contacts are
in the folder. But how do I see how many CHILDREN there are total if they are
listed under their parents' contact info?

you could define a view that shows the children field and then sort it so
that you can see how many children there are. You haven't exactly described
what type of field you are holding the children's names in and how you are
using it. Have a look at Define a New View. How to get there depends on
your version - you need to post that here when you have a question.
