User-defined fields in Forms

Can anyone help me out here??? I created a user-defined field called
Processing Date that I dropped into my Subject line. When I bring up the
form, it is indeed there. However when I e-mail the form it is no longer
there. I checked the properties and the advanced properties on the label and
the actual date and it all seems good to me.

What am I doing wrong here??? Sooooooooo frustrating....Can someone please
help me???

That option..."Send form definition with item" is actually within the
Properties tab within the Form Design. And that didn't seem to do the trick.

Is it really this hard to put a date on a standard form and display it for a
recurring e-mail I have to send???

Am I way off base here???

Any help, again, would be greatly appreciated.
