Upgrading from Office 2000 to Office 2003

Should I uninstall Office 2000 first or use the Office 2003 itself to
uninstall Office 2000 when 03 installs? I ask because I want the large
Outlook.pst file feature that 03 has and 00 doesn't.

It's best to uninstall it yourself first.
Note that you'll need to create a new pst-file if you want support for large
pst-files.

If I uninstall it first, won't the new Outlook have the large .pst file
by default? And then couldn't I open a saved, old .pst file and copy the
messages to the new one?
 
No, because the new install will recognise your old data file and use that;
you would need to create a new unicode pst, then copy data from old to new,
and set new as default store.

I was thinking of moving the old .pst file to an external hard drive and
then uninstall Office 2000 and install 2003. When the 2003 install is
done, copy the old .pst file back to the computer and then open it and
copy the messages. Will that work?

If that won't work, how do I go about creating a new unicode .pst file
and how do I set it as default? I would assume if I do this, I would
need to close the old .pst file, right?

No, that approach will corrupt your configuration.

After you have uninstalled Outlook 2000 and installed Outlook 2003 recreate
your mail profile as per;
http://www.howto-outlook.com/faq/newprofile.htm

But instead of setting your original pst-file as the default delivery
location don't do anything just yet.
After recreating your mail profile open Outlook and notice that it is empty.
Connect to your original pst-file by File-> Open-> Outlook Data File...

After this you can move your items to the new folder set.

That appears to be a web site with instructions for upgrading to 07. Do
the same instructions apply for 03?

I save my .pst files daily and have a folder with Monday, Tuesday,
Wednesday, etc. in it on my D partition (I have C and D). Will multiple
..pst files affect this process and, if so, should I nuke all of them
except the latest one?
 
No, that page is not about upgrading to Outlook 2007. It holds instructions
on how to create a new profile on Outlook 2002, 2003 and 2007.

Your backup system has nothing to do with this. Once you've created a new
pst-file in Outlook 2003 I assume you'll start to backup that one too,
right? The only difference is that you shouldn't use those previous backups
to overwrite the newly created pst-file in case of a disaster but you can
still connect to them by File-> Open-> Outlook Data File...
