Two messages sent for every 1 in outbox? Spy?

I have two email addresses set up in Outlook... when create and send one
message the send and receive status bar at the lower right hand corner shows
2 emails being sent for every one in the outbox. Is it possible spy ware
has hijacked my email and is sending a copy to some one?

More likely an old bug in Outlook 2007. You never identified WHICH
version of Outlook that you use. OL2007 has a counting bug where it
includes an n-1 count into the send total for your n accounts. I don't
know if the bug ever got addressed in a later Office update (I'm back on
OL2003).

If your recipients are getting multiple copies of your e-mails, disable
the superfluous e-mail scanning by your anti-virus program.

Could it be a stuck read receipt?

If you are using Outlook 2007, you could be hit by "the counting bug". In
this case it is just the counting that is off and you are not really sending
2 messages. Service Pack 2 fixed the bug in some cases, in other cases
you'll have to recreate the mail profile. Considering the issue could return
just as easily, I wouldn't further bother about it if you know your system
is clean.
