Now that Windows Defender is part of Vista, is there no way to get an icon
into the notification tray bottom left of toolbar?

From the Windows Defender Interface/GUi try:

Tools -> Options -> and scroll down to:
Choose when the Windows Defender icon appears in the notification area:
[It's under the Real-time protection options]
Select Always

?:)

I have this issue as well. I went where you said and there is no such
option. Running Windows Defender Client 6.1.7600.16385 under Windows 7
Ultimate x64:

1) Click Tools in top menu bar
2) Click Options in window (first link, top left)
3) Select "Real-time protection" option from left side list
4) No option to "Choose when the Windows Defender icon appears in the
notification area" is on this screen. Just a check box to "Use real-time
protection (recommended), and then two checkboxes for what to scan. That's
it.

I search for this issue and all I see are people recommending your
suggestion, but it looks like Microsoft may have removed this option from the
application.

I think the icon is allowed to be controlled by the OS settings in Vi sta
and 7 at this point. Right click an empty area of the notification area
(down by the clock, if you display the clock) and choose "Customize
notification icons" Set Windows Defender to "Show icon and notifications"
(Windows 7 notation--may be different in Vista)

If that doesn't do the job, repair the application in Control Panel,
Programs.
