Could the text color be set to default to white. Can you mark it and change
it to black?

If so when its black right click the text box and choose set autoshape
defaults
 
You need to go to Format|Color Scheme and change yoiur background color to
something that contrasts with your text. Or vice versa. (But I'm betting you
have a dark picture or color inserted for your background and didn't change
the background color from white.)
