How can I delete the templates and template groups that are installed
automatically with word 2000 to prevent users from trying to access
incorrect templates?

Check the location of your template files by clicking...

Tools | Options | File Locations

Words templates are normally stored in:

C:\Program Files\Microsoft Office\Templates\1033

locate them there, and modify the extension of the
templates you want to make unavailable, or move them to
another directory.

That won't suffice. You have to actually uninstall them.
