How can I apply changes I made to a template to documents previously saved
using that template? I tried checking the "Automatically update document
styles" while I have the template open, but it will not stay checked. I then
tried to check that box in a previous document, and "Templates and Add-Ins"
is not an option under Tools. Any advice?

What you need to do depends on what changes you made to the template.
