Tasks, user defined fields?

I listed a couple of things called:
Apples, Cake and Hotdog

I wanted to make a custom field called "Type" but instaed I could only edit
it using "Company" and added the following fields:
Fruit, Dessert and Meal

I could go "Field Chooser> New" and define my own however I cannot put
values in those fields.

Any idea how?

You didn't say where you listed "Apples", "Cake" and "Hotdog". I am not sure
you can create a dropdown list with a new field in a Table View of your task
list -- you might have to create a custom task form and add a combo box or
list box to it and use that to choose a value for that field.

I listed "Apples", "cake" and "hotdog" under the "Company". I want to create
a another custom field where I could type something in and show it. I don't
really need a drop down list, I just need something where I could have a
variable text input and at the same time show "Type"

You probably need to change a setting. Go into the settings for the view you
are using (for example, Simple List), click the Other Settings button, and
then check the box for "Allow in-cell editing"). Now if you create a new
text field and add it to that view, you should be able to enter values into
it.
