Editing values in user-defined fields

I have classified emails with customer purchase orders, invoices and
transfers in a certain folders. I have then added two user-defined fields to
the email list view, one is called "Amount" and formatted as currency, and
the other is called "Invoice No." and formatted as text. How can I edit the
values in those columns for each email?

Turn on in-cell editing for the view -- View | Current View | Customize Current View | Other Settings.

Great! And is there any way I can enable this in-cell editing just for
certain columns?

It still won't allow me to type in the 'Notes' column, even though I have
checked the box to turn on in-cell editing for the view. Why??
