We deploy several hundred computers twice a year. I set the NIC to "100
full" on the image. Once sysprep is run it changes it back to the default
network setting of "auto mode". Is there away to stop this? Or a script I
could run in the runonce? As its a real pain manually changing each one on
deployment.

Unfortunately that's determined by the settings in the device's INF file. The
options are to break the digital signature on the inf file by setting it to
the value you want, scripting it post setup, or asking the device vendor if
they have a signed version of the inf that is set to a default of 100 full.
Doubtful on the last one, but you never know... :-/
